Delicious Vegetarian Breakfast for Two. Yummy Hot Oatmeal with Apples, Almonds, Vegie Bacon Strips with Hot Beverage 
Since I think I make great Oatmeal I thought I’d go ahead and provide “my recipe”.
Cooking time 15 min
Ingredients:
2 cups Old Fashion Rolled Oats, Quaker Oats, or buy in bulk. Don’t use quick Oats, (processed and too mushy )or Steel Cut Oats, (need soaking to soften grain and it doesn’t become creamy )
3 and 1/4 cups of water
1 crisp apple, (old fashion variety better than a delicious)
Chop apple into medium consistent size pieces for even cooking.
2 tbls Slivered almonds, toasted or raw
Tsp vanilla extract
1 tsp cinnamon
Pinch salt
Non stick spray
Margarine or butter
Raw brown sugar
Silky unsweetened Soy Milk, (the most consistent and best tasting in my opinion)
4 to 6 slices vegetarian Morning Star Farms Bacon Strips
Mist pot with non stick spray or paper towel with cooking oil to prevent sticking and for easier cleaning
Bring water to boil in heavy saucepan with pinch of salt. (I like to use medium size porcelain over cast iron pot, (Le Creuset)
Gently toss in apples; turn down temperature to medium low
Add both cups of oatmeal stirring with wooden spoon
Add almonds, vanilla & cinnamon, stir
Add small dollop of butter or margarine
Stir while mixture gently bubbles and then turn down temperature to low and simmer for around 10 minutes stirring occasionally. Check and add more hot water if needed
Remove pot from heat, cover and let steam for 5 min
Microwave veggie strips approx for 60 seconds, flip and microwave for another 20 to 30 seconds or to your preference
First mist non stick tray, microwave veggie strips then slide strips onto a paper plate to blot before serving
Serve oatmeal in two attractive bowls 
Add brown sugar to taste, and heated Soy milk
Serve with veggie strips. Enjoy with Hot apple cider, hot tea or coffee
Delicious satisfying meal for a cold winter day
Note: Substitute another nut like walnuts or pecans for almonds, if desired for a more nutty taste
Substitute Raw Brown Sugar with Maple sugar, or Date sugar
